Ingredients:

  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 egg
  • 2 cups almond flour
  • 1 tsp baking powder
  • 1/3 cup dried cranberries
  • 1/3 cup white chocolate chips

 Directions:

  1. In a large bowl, cream together coconut oil, maple syrup, egg, and vanilla.
  2. Add in almond flour and baking powder; mix until combined.
  3. Fold in the cranberries and white chocolate chips.
  4. Roll dough into balls and flatten onto a parchment-lined pan.
  5. Bake at 350°F for 10-13 min Let cool and enjoy!
